a moment to refocusonlife ~ dented

Hey everyone!

Today, I drove to to Wilson and Raleigh for work. When I'm driving, I like to look around. I like to look at the other drivers, the cars on the road, the houses and neighborhoods beside the road. Yes, I know I'm a stalker, but when you drive as much as I do, you have to entertain yourself, right?

Last night, I went to a meditation class (bear with me, I will pull this together, I promise). It was fantastic. I am REALLY trying to learn to control my stress levels thru journaling and meditation. My functional medicine Doctor prescribed both as part of my regimen. The journaling, I've got. The meditation, not so much. But, last night, I got it. I think I actually entered a meditative state.

Driving, in my opinion, can be very stress-relieving, or it can be very stress-inducing. It's all about your mental state. So, today, I tried to pull out the mediation from last night while I was driving. I think I actually achieved some meditation while driving. Safe? I hope, but I'm not sure (I didn't go to sleep though!) When I remember disengaging the meditative state, the first thought I had was, "dang, look at all those cars with dents".

Who drives around with a big, ugly dent in their car? Not me! If Mark dents one of our cars, we have to fix it immediately! I started applying that to my body. Being overweight in my past was like a big dent on the exterior of the car I spend all my life in...
So, even though I'm not anywhere near blemish free at this point, I feel that I have made huge progress toward fixing the major dents in my exterior.

With those exterior dents fixed, or at least patched, now it truly is time to focus on the interior. Some days, I feel like I'm just taking all these "candy wrappers", "papers", and junk and slinging them in the floor of my interior. For instance, I was sick for about 10 days (I'm just now feeling better...thankfully), but during those 10 days, for some reason I felt the need to have some caffeine free diet Sundrop. I fed my body poison, so I littered the floor of my interior.

So, more and more, I'm going to focus on the interior. What does that look like? I don't know, but I'm working on that...and hopefully it'll help with my motivation which I have struggled with greatly as well.

Take an inventory. Look at the biggest issues, break them down to smaller issues. Check for the big dents. Fix those. Then move to the small dents while you're working on cleaning the interior.

Who the hell knows if this even makes any sense? Let me know your thoughts.

a moment to refocusonlife ~ motivation

If you've been following along, you may have noticed my lack of postings as of late. There are so many factors that have contributed, but the overall reason had been on simple thing: lack of motivation. 

I've had trouble trying to come up with motivational snipets when I have zero motivation for myself. So, I've been trying to figure out the motivation behind my lack of motivation...

The end of school came along and threw a wrench into my schedule. If you know me, you know that I thrive on a schedule. Secondly, we went to Mexico and everything I've preached about for months went into the Maya Riviera. I ate a large quantity of food (remember that I have no will power at a buffet). Alcohol was flowing freely--perhaps I had a Mojito (a single Mojito, yep, that's my story). 

Once we came home from Mexico, we were preparing to help Becky move to Florida. I don't know about you, but long hours in the car lead to endless snacking and not enough activity. 

During that trip, I became sick. I have a summer cold or some jazz still today. I drank a few diet drinks -- exercising my action by saying I was so sluggish that I needed caffeine. 

Let me just tell you, it's all BS. I've just been excusing myself and kidding myself. Well, enough already! 

What the hell is wrong with me? Somebody please help me find my Mojo! 
I know it's still out there...I just gotta find it. So, the rest of this weekend, I'm going to flip rocks, open closets, look in the hampers, but by god, I'm going to find that mojo!

Weekly Meal Plan - Week of June 8, 2014

Hey Everyone! Here's our meal plan for this week:

Sunday: Grilled Chicken/Salad/Green Beans.

Monday: Low-Carb Beefed Up Meatloaf--YUM! My favorite! We'll pair it with some brussel sprouts and sweet potatoes.

Tuesday: I have meetings. Christian has been begging for Hamburger Helper. I'm giving in and letting them have it while I'm gone! I would have Mark switch the pasta for whole wheat, but the kids do not care for it...so I'm giving them tonight!

Wednesday: Lauren requested Chicken Enchiladas. I'm going to make her help me cook this one! We'll see how it goes. Mark and Christian will not eat these enchiladas, so I'll just cook them some chicken separately.

Thursday: Pork Chop Day! We'll pair it with Asparagus and Green Beans probably.

Friday: Mark's Grandma Cleo is turning 90! Today we celebrate her at his parent's house.

Saturday: Lauren is going to a friend's house for a party. The rest of us will probably go to Mark's Parents for more time with his Grandma and extended family since they only come here from Indiana once or twice a year.

Sunday: Father's Day. Let's rock it out. We'll cook for my Dad...but I'm not sure what yet.

Tuesday: I have meetings, Mark and the kids are going to have Spaghetti because we haven't done any pasta while I've been on Gluten Free.

Wednesday: Pee Wee Pizza's for the family/Salad for me.

Thursday: Grilled Ham Steaks/Salad/Sautéed Veggies.

Friday: Dinner out...we have a show in Charlotte. Excited!

Saturday: It's Fridge Clean out day! We'll eat leftovers.

a moment to refocusonlife ~ just believe

Hey everyone! Life has a way of getting in the way of things, doesn't it? I've been meaning to write this entry for over a week now...but alas, here it is!

On May 17th, I participated in the Warrior Dash #warriornation! Up until the VERY second I started running, I was scared out of mind. I wasn't scared of the potential that I might not be able to finish. I wasn't scared of the obstacles. I was scared of something much more obvious...

I was scared of running! 

My heart was beating out of my chest as we lined up at the start line. I mean, I was terrified that I would run a few hundred feet and be walking the entire course after that initial burst. But that wasn't the case! Until my feet started moving, I was not sure how I would do. But then the strangest thing happened: I was having fun. 

I was running, no one was chasing me, there were no tigers, no rabid dogs, absolutely nothing was chasing me and I was running! It was exhilarating! 

Then, out of the blue, I had ran for an entire mile without so much as a slight distress. We had passed a couple obstacles and I was still moving. I was confused. I was even able to carry on a conversation with Charlotte and Mark. Maybe I wasn't exerting enough effort? 

Then, another strange thing happened, I passed a very physically fit man that I had admired at the start line. That gave me even more hope. I was thoroughly confused at this point. 

All of this to state, I was afraid of running. Someone had suggested that I run the ALFA Hike for Hope 5k back in April. I literally laughed at that suggestion. I was fearful that I could not finish, so no way would I even attempt. 

It was all in my head. I was mentally blocking myself from enjoying something that it appears I may actually like! I wonder how often I've done this in my life? 

I am now registered for a timed 5k in July. The Athletic Quilt Streetlight 5k scheduled for 7/12/14. I'm not sure what kind of time I will post. I'm not sure I care. All I know is that, by gosh, I enjoyed the heck out of running and I'm excited about the possibilities! 

Big, huge thank you's go out to my #warriornation peeps. I love you, Mark and Charlotte (and you too Spectator Lisa)! You all rocked it out with me thru thick (mud) and thin (beer).

Weekly Meal Plan - Week of May 25, 2014

Hi Everyone!
Sorry for the late blog post!

Here's our plan for the week:

Sunday: Patio Party @ Friend's House. We had grilled burgers and hot dogs.

Monday: Pork Chops, Green Beans, Sautéed Spinach. We used the grill and the pork chops were amazing!

Tuesday: Grilled Steaks. I found a beautiful Ribeye. Kind of excited! We'll pair with a salad. Two of the crew doesn't like steaks, so I will probably grill them a burger!

Wednesday: Proscuitto Stuffed Chicken Thighs. Yum! One of our favorites. I'm on a roll with the grill...we might even do them on the grill!

Thursday: I have an ALFA meeting. Mark is going to make the kids our homemade Tacos.

Friday/Saturday: I'm working all weekend. We'll be eating out.

How many people would like to see my weekly workout plan? Just gauging interest........

Weekly Meal Plan - Week of May 18, 2014

Hi Everyone!

Whew! What a busy weekend! I barely had a minute to think, but I've got the plan in place! Here it goes:

Sunday: Grilled Ham Steak, Corn on the cob, Sautéed Green Beans, Zucchini/Mushroom Sauté.

My first "Chopped" Competition Plate from last week.
Fun times! 
Monday: I have meetings all evening. The family is going to have pizza. Enjoy y'all!

Tuesday: It's Lasagna Day! Half will be using Eggplant as a replacement for noodles. The other half will be a combo of Eggplant and Noodles (per Lauren's Request). We'll have a salad as well.

Wednesday: Kielbasa, Brussels Sprouts, Sweet Potato Fries. Mark likes Mac and Cheese with his Kielbasa, so I'll probably make him and Lauren some.

Thursday: Pampered Chef Party for Lauren and I! Mark will be winging it... Good luck with that!

Friday: We're going to see Les Mis on Friday. It starts late, so we'll grab a quick dinner somewhere before--I'm thinking Hatch! Love that joint! They know how to rock out some Brussels Sprouts.

Saturday: Salads for lunch. Dinner plans with friends.

a moment to refocusonlife ~ love a good challenge

Happy Friday y'all! For the first time in for as long as I can remember, I'm not totally excited it's Friday. Aside from the routine computer issues this week, it ain't been a half bad week. But, and I can't believe I'm saying this, I'd just as soon hop back to Monday this week.

Why? Why, you ask? Because it's Friday, 5/16/2014. Tomorrow, Saturday, 5/17/2014, I will participate in the Warrior Dash. #warriors! Hashtag Warrior baby.

So, what possessed me to register for this event? Well, let's see:


  1. I registered before Christmas. I figured this would give me motivation to get into better shape (note to self: it didn't). 
  2. It's on the bucket list (so is Paris, so somebody buy me a ticket). 
  3. Friends are doing it (no, Mom, I'm not going to jump off a cliff if they do--just dumpster dive and mud crawl). 
  4. Mark loves being outdoors (and this proves my love for him, right?)
  5. Even gay men can be masculine! (no, really they can!)
Enough lists for now. 

So, come tomorrow morning at 11:30 am, I'll be either done making my way thru the mud course or I'll be loaded up on a gurney going to the nearest hospital. Either way, I'm going to be muddy. 

So, send a little energy out to me as I participate in my first 5k. Who knows, maybe I'll love it? I do, after all, love a good challenge!

a moment to refocusonlife ~ grain free


On Sunday, May 4th, 2014, I began the next step in my lifestyle transition. I've become super focused on goals during all of the weigh loss and my lifestyle changes. For some reason, numbers and data drive me (nuts?). 

At the beginning of 2014, I set one of my New Year's Resolutions as getting my blood pressure numbers down. Thru the weightloss, I think my numbers improved, but I wasn't seeing the improvement that I wanted to see. With that goal in mind, I saw a functional medicine Doctor. My goal is to reduce my blood pressure enough to end prescription medication. That may mean that I take supplements, I exercise, I eat right...whatever...my goal is to fix the blood pressure without pharmaceutical intervention. 

I've learned so much from that woman! <3 her. 
Can it be done? Of course it can! I just have to find the right combo that works for me. With all of that said, I had the appointment with the functional medicine doctor a couple weeks ago (right around Easter). He gave me a plan. One of his goals for me was to have me go "grain free" for 30 days. What that means is no wheat, rice, bread, grains, and a plethora of other items. It was not a huge stretch from the lifestyle I had already been living, so I dove right in (after the Art of Chocolate of course...)

I'm now entering week two of the grain free lifestyle. The thing I've noticed the most is that I feel like I am less hungry. Last week, for the first time in a couple months, I came under my weekly caloric budget...by 1500 calories! I was very pleased. I haven't been under budget in quite some time, let alone 1500 calories under! And...I wasn't hungry! 

The moral of the story here, I think, is that I never stop learning. I never stop learning about myself. I never stop learning about healthier lifestyles. I never stop learning things that others already know about me. I think that anyone that has stopped learning about themselves needs to take a step back and look in the mirror. See that face staring back? There's a wealth of information that you just need to dig in to find! Are you willing? Are you afraid of what you might find? 

I was. But not any more! 

So, this week, take a moment to refocusonlife, learn something about yourself and give it a whirl! You never know what might happen! 

Weekly Meal Plan - Week of May 11, 2014

Hey Everyone! Here's what's on tap for this week:

Sunday: Mother's Day Lunch at my parents (low-carb beefed up meatloaf courtesy of yours truly). Mother's Day Dinner @ Mark's Parents.

Monday: I have my final cooking class, so Mark is taking over. Since the whole family likes Hamburger Helper and I won't let them have it, I bought them a box so they can enjoy it while I'm not there. Yuck. Processed trash.

Tuesday: We are taking the Sea Doo's to drop them on the lake! Yay summer! We'll have a quick and easy dinner. I'm going to stop at Food Lion on the way home and pick up a Rotisserie Chicken. It's quick, easy, healthy, and delicious! We'll pair it with a salad most likely.

Wednesday: BBQ Grilled Boneless/Skinless Chicken Thighs. We'll pair it with some Brussels Sprouts.

Thursday: Lauren's Final 7th Grade Band Concert. Tonight we have dinner out due to time constraints.

Friday: Dinner Out

Saturday: Yikes! Mark and I are participating in the Warrior Dash. I'm nervous as can be...but I think it'll be a lot of fun! Bring on the mud! Afterwards, we'll have dinner with friends.

Weekly Meal Plan - Week of May 4th, 2014

Hey Everyone! 
Here we are at the start if another week! Here's my plan:

Sunday: Beefed-Up Meatloaf/Green Beans/Salads with homemade Red-wine Vinaigrette. 

The rest of the week is weird. Mark is gone with the Senoir trip for 3 days.

Monday: Grilled Wild Caught Salmon and Grilled Shrimp. I couldn't believe the color difference in the farmed salmon and the wild caught at the store. Unbelievable. I'll pair it with a homemade dill sauce and some asparagus. 

Tuesday: Vegetarian Lasagna. I've gone grain free for a month (at least) so I'll make the lasagna with eggplant. One of my favorite dishes! Paired with a salad. 

Wednesday: BBQ Pork Roast, sauteed veggies. 

Thursday: This evening I'm doing prom photography for NCSD. I'll make something quick. 

Friday: ALFA Bingo Night! Dinner out with Friends. 

Saturday: We will clean out the fridge to see what we have left. Leftovers anyone?

Weekly Meal Plan - Week of April 27, 2014

Hi Everyone! Here's our meal plan for the week:

Our Sunday Dinner was Beautiful and Outside. Perfect. 
Sunday: Dinner out. Was busy editing photographs from a wedding.

Monday: Parmesan-Dijon Turkey Breasts. Looking forward to trying this one! We'll pair it with some brussels sprouts and green beans.

Tuesday: We are going to the Taste of Burke. You should all join us! 6pm at the Morganton Community House. I'm excited!

Wednesday: Pee Wee Pizzas. I had this one planned last week, but we had to ditch it because something came up. We all make our own individual pizzas. I make mine and Mark's on Whole Wheat Pita Bread. Very tasty.

Thursday: Hamburger Steaks. Just cause I've got some grass-fed beef and I have been craving a burger.

Friday: Art of Chocolate. Need I say more? The most fabulous foodie event of the year! Options will love you if you join us! Friday night. The Armory. Morganton. Be there.

Saturday: Salads. Atonement for Friday night. ;-)

a moment to refocusonlife ~ evolution

Every day I learn things. Heck, I might even say I learn something every single minute of life. But to learn, we have to be open and receptive to what we see, hear, smell, taste, and touch around us.

One thing I've continually tried to improve over the course of my lifestyle change is receptiveness. Receptiveness helps bring about clarity. With this past weekend's clarity, I have become quite sad because I realized that I truly have no self-control. 

I've mentioned my lack of ability to control myself around a buffet, but I'm beginning to learn that my diesease, overeating, will truly be my lifelong struggle. 

As I wrote this, I was going to bed sad. Satruday I had no self control. I ate too much. I ate too much of the wrong things. I feel incredibly guilty, but as I process this guilt, I'm trying to keep it in perspective. That perspective is that it was one day. Tomorrow is a new day.  

But, there are bizarre circumstances several days this week. A couple of events. Food events. One on Tuesday. One on Thursday. Another on Friday. Another on Saturday. Oh my wow. 

I give up. No, actually I do not give up, but I'm going to have to avoid the scale this week. I hope it isn't too severe.

Meal Plan - Week of 4/20/2014

Happy Easter Everyone!

Here's our plan for the week:

Sunday: Breakfast: Pancetta & Asparagus Crustless Quiche, Homemade French Toast, Country Ham, and Fruit.
Lunch: Quick Salads w/ Homemade Red Wine Vinaigrette Dressing.
Dinner: Coq Au Riesling (Chicken in a wine/mushroom sauce)/Brussels Sprouts/Sweet Potatoes

Monday: Turkey Kielbasa/Whole Wheat Mac & Cheese/Steamed Broccoli

Tuesday: Ribs/Asparagus/Salads

Wednesday: Parmesan-Dijon Turkey Breast Cutlets

Thursday: Pee Wee Pizzas. We'll use leftover items from the week for toppings.

Friday: I'm taking the day off...so, we'll have a normal breakfast, salads for lunch, and then we will eat dinner out as a family.

Saturday: We have a yard sale in the morning (come buy our junks y'all) and an AWESOME wedding in the afternoon. Guess we'll eat wedding food and whatever we can find!

a moment to refocusonlife ~ take notice

I'm struggling. I'm struggling with ideas. I'm struggling with motivation. I'm struggling with bad food. I'm struggling with the dreary weather outside. I'm just struggling.

Yesterday, Lauren, Jakob, and I went to see Rio 2 at the theater (it's so gosh darn cute). I had things planned all day and hadn't had time to have lunch. By the time we arrived at the 3:30pm movie, I was ravished. I have to admit, I was excited about the movie because I wanted popcorn and I had given myself permission to have popcorn.

Turns out, I still have a control problem because not only did I order a huge popcorn, I also had nachos. Can you blame me? I hadn't had lunch.

Fast forward a couple hours. Movie is over. We had dinner plans with Mark at Friday Friends. I had a caesar salad and a scoop of chicken salad. Then, to top it off, we stopped at Silver Creek for a little dessert. I had a double scoop of no-sugar added chocolate caramel pecan ice cream. Ok...it's official...I ate too much. After the ice cream (which is WAY different than sugar free), I actually felt my blood sugar rise. I felt bad immediately. I knew I had overdone it. But, it was too late, so I decided not to punish myself. Let's just keep moving forward.

But, in that forward movement, I want to make sure that I learn from my mistakes. It is abundantly clear to me that my body cannot handle simple carbs. I've proven this to myself over and over. What is it going to take? Why can I just not avoid these friggin' delicious foods? It's a rhetorical question. I know the answer.

So, yesterday, Mark posted the following, "It is easy to sit up and take notice. What is difficult is getting up and taking action." (Al Batt, American writer)

Today...I have taken notice. Now, I have to take action.

Meal Plan - Week of 4/13/2014

Hey everyone! This is a late posting for sure! We had a BUSY weekend, but all in all a good one.

Here's the plan for the week:

Lauren and Christian are gone to Charleston Monday thru Wednesday this week. I hope they have a great time...but if I were in Charleston, I can tell you I would not be eating dinner on the USS Yorktown every single day! Good luck my sweet young ones! Miss you already!

Sunday: We ate a very fast meal at Mom's. Thank you, Mom, for the food from the grill.

Monday: Low Carb Beefed-up Meatloaf/Brussels Sprouts/Broccoli. It was a delicious meal. I always eat too much though. Tonight, I had a portion and a half of meatloaf. That's a LOT of meat. But, alas, it is one of my favorite meals.

Tuesday: Beef Ribs. I had some amazing beef ribs in Charlotte over a week ago. They were tender and delicious. I'm going to try to repeat that. We'll top it off with some mashed sweet potatoes and asparagus.

Wednesday: Apricot/Cranberry Stuff Pork Loin and salads with Red Wine Vinaigrette dressing.

Thursday: Caprese Stuffed Chicken. This is a new recipe. I cannot wait to give it a try. Whatever veggies we have left on Thursday is what I'll add as a side.

Friday: We are all off from work and school on Friday. I'll put at least 2 squares on the table. Breakfast is easy. Lunch--probably some salads. Then on Friday evening, we'll take Christian to his Mom's and the girl, Mark and I will grab some dinner somewhere. I think Lauren would love Carrabba's. We'll see. It's her choice.

Saturday: We have no plans. It's the opening day of the Morganton Farmer's Market. I'm going to go see what I can round up for the day at the market!

a moment to refocusonlife ~ allergies

Well, it's that time of the year. Spring has a way of waking up our senses like no other season! Everything has been dead for the winter and now everything is in full bloom. And, with those beautiful blooms come pollen! With pollen comes SNEEZING and allergies!

I have always had severe allergies especially in the Spring and Fall. I'm happy to say, though, that I would rather suffer allergies and have warmth than be stuck in dreary winter all the time. Before my lifestyle change, was my body allergic to the food that I was taking in? Is my body still allergic to certain foods?

I've put a lot of thought into this...and I do not even know if it's possible or not, but I can tell you that the reactions I had to my "old" eating style certainly do look similar to allergic reactions. On a funny note, I compare my pre-weightloss body to that of Will Smith from Hitch. I had an allergy so severe that I actually swelled me up like a bloated pig. Once I cut out those horrible foods, like refined sugar, white pasta, potatoes, my body was able to heal itself and kick "allergies" in the rear.

Is this the case? Probably not. But, I can tell you that I continue to draw that conclusion in my mind. And, well whatever works tends to work. If I tell myself I am allergic to certain "high carb" foods, then it keeps me from slipping back down that slippery slope.

My endocrinologist and I had a very similar discussion at one of my recent appointments. While the word "allergy" was never used, he did tell me that some people just could not handle the processed, refined sugars and simples carbs. I'm one of the lucky ones. My body simply cannot deal. I've learned that about myself.

And, at the end of the day, aren't we all just here to learn something new each and every day?

Meal Plan - Week of 4/6/2014

Happy Sunday Everyone!
Here's our plan for the week:

Sunday: Earlier today, we went to the Art of Chocolate Artist's Drop Off Reception. I ate a bunch of finger foods, so tonight we had salads. I have taken to making my own dressings in single serving sizes. Tonight, I made a bangin' one that included red wine vinegar, olive oil, and spicy brown mustard. YUM!

Monday: Lasagna. I will split the lasagna again like I did last time. My portion will be strictly vegetarian and sans pasta. I'll use eggplant instead of pasta. I'm using breakfast sausage for the rest of the family's side of the lasagna. We will have side salads as well.

Tuesday: Taco Tuesday! We'll use our homemade taco seasoning. I'm going to a seminar entitled "How and What to Eat, How to Move, and How to be YOUR Best." I hope to come out with some new knowledge and dinner on the table when I get home. Yep, that means you're cooking Mark Patrick! Mine will be made into a salad.

Wednesday: Steaks/Asparagus/Sweet Potato. A good old fashioned American meal. I am noticing a trend this week: too much RED meat! I wish my family would eat fish.

Thursday: Chicken in a peach, blueberry sauce. This is a new recipe. I'm looking forward to trying this one out!

Friday: I'm hoping to take the Boo's and the poor kid that broke his arm at our house to the movies. I plan to eat POPCORN for dinner! I know...not healthy, but...fun times.

Meal Plan - March 30, 2014

Hey Everyone! Here's the plan for the week:

Sunday: Large Salads. We had some left over ham from dinner on Thursday night, so I warmed it up and added to the top of the salads. Topped it with a mustard vinaigrette. It was delicious!

Monday: Hot Dogs/Cole Slaw. Tonight I have a mandatory meeting for Lauren and Christian's upcoming field trip. Had to do something quick. Ballpark makes a GREAT tasting, lower calorie Turkey Frank. 45 Calories each and very good, in my opinion. Topping it off with a delicious cole slaw I made last evening (wanted to make it ahead of time to allow the flavors to "meld" together.

Tuesday: Kielbasa/Mac & Cheese/Asparagus. I have a meetings and work to do this evening. Mark is responsible for dinner. We buy a turkey Kielbasa from Hillshire Farms. I'm not a fan of this meal, but Mark and the kids like it, so have at it y'all! The Mac & Cheese will be with Whole Wheat Pasta.

Wednesday: Fajitas/Salad. This is one of my favorites. I stole the recipe right out of the Sugarbusters Cookbook. It's fantastic. It combines soy sauce, red wine vinegar, and canola oil to make a banging flavor on the chicken.

Thursday: Pork Marsala/Brussels Sprouts. At cooking class last week, I learned to make a homemade Marsala sauce. Can't wait to repeat it with the pork rather than chicken!

Friday: Quick bite out.

Saturday: Lamp Chops/Greens. We'll use whatever greens haven't been used previously in the week to top off a delicious meal. Haven't decided on preparation yet, but I will probably grill the lamb chops.

a moment to refocusonlife ~ progress

Goofy. 
Last week I had one of those AH HA moments. I was down and kicking myself while I was down. I had made some mistakes in my eating. I had bounced up a pound or two on the scale. For the week, I was over by about 1500 calories. I was really hating on myself.

Weekly, I listen to Jillian Michaels podcast. On Friday I had to travel to Charlotte for a seminar. On that trip, I got to hear Jillian's latest podcast. It was truly a day I needed to hear a specific message. And, it came during the podcast. Isn't life crazy like that? You need something specific (in this case VERY specific) and karma delivers it to you.

Jillian said that people should strive for "progress not perfection". That rang true with me. That hit home. I'm not going to go into all the reasons why I was striving for perfection. I'm also not going to dissect that quote. Either it strikes you or it does not.

Just for today, focus on progress, not perfection.

Saturday: Working in Raleigh will be there overnight.

a moment to refocusonlife ~ bad day

I had a BAD day today! I went to a lunch and learn. Little did I know that I'd be learning that some places just do not encourage healthy eating.

I've had to "eat my way around" a many a cafeteria lines. This one was different. Dramatically. I was shocked and I caught myself wondering if anyone else thought the same thing. Why was I shocked? Let me give you the layout of the menu:

  • Pulled Pork BBQ with BBQ Sauce
  • Baked Beans 
  • Cole Slaw
  • Potato Salad
  • Rolls
  • Banana Pudding
Could anyone guess my first question? Anyone? 
Oh, I thought so. My first question was where's my blood sugar meter. Look at that menu! The only thing remotely low glycemic is the Pulled Pork (sans BBQ sauce of course). 
So, I made a decision to eat anyway. I took it as easy as possible. I had a large serving of the pulled pork. I had a small serving of Baked Beans, a small serving of Cole Slaw, and a too large for my own good serving of banana pudding. 

I find myself sitting here wondering how people could ever wonder why we have an obesity epidemic in this country. When a group of people en masse are served a menu made entirely of unhealthy foods without one single vegetable to be found. Sure, maybe they threw some onions into those baked beans, and there had to be some cabbage in that cole slaw somewhere, but when those things are lathered in brown sugar and/or mayonnaise, does it still count? 

Today, I wasn't prepared. I missed my opportunity to be healthy at lunch. I could have snacked before going to that lunch to lessen my hunger when I arrived. I wrongly assumed that there would be some real food there. Next time, I will prepare better. If I have to, I'll skip the provided lunch in order to have better choices. Maybe next lunch and learn I'll teach the presenters a thing or two about food. Either way, next time, I am promising myself not to end my day over my allotted daily calories by 651. I'm sad.

Meal Plan - Week of 3/16/2014

Sunday: Dinner with Mom. She wanted to prepare a Turkey! Should be a wonderful dinner! I always eat too much when at Mom's Family Buffet though! Wish me luck!

Monday: Parmesan Crusted Chicken/Mashed Sweet Potatoes/Roasted Brussels Sprouts. This is one of my favorite chicken dishes! Can't wait for it!

March 15, 2014

Tuesday: I have meetings, so Mark is going to make Ham Steaks. I figure he'll top it off with a salad and some sort of potato for the kids!

Wednesday: Sloppy Joe/Macaroni & Cheese/Asparagus. I will use whole wheat pasta and some pre-packaged nasty cheese to make Mark one of his favorite foods. Should be great!

Thursday: Leftover evening! We'll either have leftovers from earlier in the week or leftovers from the freezer. Either way, we have some cleaning to do!

Friday: My evening off. We'll probably have something quick and easy and CHEAP because I have big plans for Saturday in Asheville.

Saturday: Spending the day in Asheville for work. Making Mark go with me and we're going to have a nice dinner! I love Asheville...even if I have to work.

a moment to refocusonlife ~ pronto!

Are you ready to refocusonlife today? If not, let's get it started...stat! pronto!

Speaking on pronto, I've had several people ask me about food coaching and while I would love to help anyone out, I thought I'd give some ideas for quick lunches. I've compiled a list of the most frequent places you'll see on the road and some super quick, easy, and relatively healthy meals you can have without wrecking your entire plan. Remember, I'm living a "correct carbohydrate" lifestyle, which means I try to reduce the impact that foods have on my blood sugar. The foods I mostly eat are low on the glycemic index (or lowER). So, without further adieu, here's a partial list...if you have more you'd like to add or places I have not mentioned, let me know:

Need Dessert? FroYo Places offer NSA FroYo.
Load up on fresh fruit (skip the chocolate I have on mine!)
McDonald's: YUCK. Used to be my favorite, now it's by far my least favorite. I've even gotten Christian saying that their food is nasty. Hopefully, he'll continue to think that so he will not grow up loving it as much as I did! Your options at this abundant joint are fairly limited. Order a salad with grilled chicken (make sure you specify grilled or they'll throw on that crispy stuff). Make sure you skip the croutons and add only about half a packet of one of the lighter dressings. Remember the oil based dressings are always better and typically have fewer calories than the creamy dressings. Try to avoid sweet dressings like French or Honey Mustard.

Wendy's: I've found several options at Wendy's. Of course their salad's. Follow the same rules as above. Make sure it's grilled chicken. Kick the croutons and any "candied nuts". Eat light dressing. I also love Wendy's chili. Order a small chili and a side caesar salad (again avoid the croutons) and skip the crackers they will throw in the bag. Also, I've been known to order their grilled chicken sandwich and throw away the bread. It's quite tasty in a pinch.

Papa John's, Dominoes, Pizza Hut, Pizza in general: Avoid if at all possible. It's bad news. If I eat pizza, I only eat the toppings and throw away the crust. Do you know how difficult that is? Mark will take two slices, take the toppings off of one slice and put two toppings on a single slice cutting his bread intake in half.

Hardee's: Fabulous any time of the day! They will make ANY of their sandwiches "low carb" if you ask them too. Watch out though, these things are calorie bombs! Skip the fries. ALWAYS. For breakfast, order a low-carb bowl. While it's laden with 620 calories, it's very good in a pinch. If I have one of these, I'm set all morning, but I have to say, I eat them VERY sparingly because that's about twice what I normally consume in calories for breakfast.

KFC: They make it so easy! Order a combo meal of grilled chicken. Skip the delicious biscuit. Have them give you green beans for the side. If it comes with two sides, order 2 green beans! They are VERY good and it's fast and easy.

Bojangles: I've eaten at Bojangles for breakfast a number of times. I just order two pieces of sausage and two or three scrambled eggs. A perfect low-carb breakfast. But, I've just discovered some lunch and/or dinner options. They have roasted buffalo bites. Order those (they do not have breading) and a side of green beans. Perfect quick meal. I've also heard they have salads...but I have not eaten them, so if you try them, let me know.

Burger King: Order a salad. Same rules apply as above. My favorite BK salad is the grilled chicken caesar. It's probably the best salad of any of the fast food establishments. They've also gone back and forth on having sweet potato fries. I'm not sure the status of those currently, but if they have them, a small order is a nice treat. Make sure you skip the brown sugar and/or honey everyone wants to serve as a dipping sauce with the fries!

Subway: You think this place is healthy, right? I could not disagree more. Again, in a pinch, I will eat at Subway...but they practice trickery that upsets me. Their "whole wheat" bread is nothing more than white bread with some brown coloring to make you feel good about what you're eating. The meats are all pre-packaged and just gross. As are the veggies. Avoid Subway. If you must eat there, choose a salad following the same rules of skipping the croutons and light dressing.

Jimmy John's/Jersey Mike's: These places know how to make better subs. I loved Jersey Mike's back in my "eat anything" days. They had the best sub by far! But, their salad making capabilities stink. They have so few veggies. If you eat at Jersey Mike's, order a salad and have them make it as best they can. Jimmy John's will do a lettuce wrap. It's kind of messy, but a good option. Last time I checked, they did not make salads.

Zaxby's: Do I sound like a broken record yet? Order a salad with grilled chicken. We went to a Zaxby's recently and they had one of those fancy drink machines! I splurged and had a diet soft drink mixed with flavors. What a fun experience!

Chick-Fil-A: I have a personal beef with CFA and refuse to eat there, but if you decide to, they have two things that are fantastic: Grilled Caesar Salad and diet lemonade!

Cook Out: I have no idea if I could even order off their menu and be satisfied. I'm sure they have a grilled chicken sandwich. Ditch the bread. If you eat here and have suggestions, let me know.

Mexican Restaurants: While not technically fast food, these places serve up food so fast, it's sometimes easier than fast food. Order a chicken fajita. Skip the chips! Skip the tortillas that come with the fajitas and make sure you order beans instead of rice (or skip both). It's full of veggies and always delicious with some salsa!

Meal Plan - Week of 3/9/2014

Happy Daylight Savings Time! Thank goodness! I'm ready for longer evenings so I have time to go out and walk after dinner. Here's this week's plan...as always if you want recipes or ideas, please let me know:

Sunday: Pork Tenderloin w/ Apple Coleslaw (a recipe from my cooking class with Suzette and Lisa!). We'll pair it with some veggies, probably asparagus.

Monday: Tacos (with our homemade seasoning)--we'll save enough of the meat to have some pizza topping for later in the week. I've also made some homemade black bean-mango salsa. I have to tell you I'm excited about this one! We'll use half ground pork/half ground beef for the meat. I'll turn mine into a salad.

Tuesday: Lasagna--I'm going traditional on half of the lasagna for Mark and Christian. The other half I'm going to use eggplant to replace the pasta. I've never done this, but I think it'll work out fine. I'll keep you posted! Salads on the side.

Wednesday: Roasted Chicken Thighs with a pan gravy and Brussels Sprouts.

Thursday: Pee Wee Pizzas! I use whole wheat pitas as the crust. From Monday night, we'll have leftover taco meat as some of the topping choices. We also have turkey pepperoni, cheese, and whatever veggies each person wants. It's always kind of fun and everyone loves them!

Friday: Who knows yet? Friday is my night off!

Saturday: Lamb Chops or Steaks. Whatever Mark and I decide we want. I have both in the freezer. They were on sale at Food Lion!

Yep, that's about right. I have an update. I think that my goals have me hyper-focused to the point that I might be making some not so good decisions. Is it healthy to weight every day? Is it healthy to be obsessed? Is it healthy for me to focus on 8000 steps a day regardless of the circumstances of that particular day?

In my hyper focused state, I've even developed an OCD "step schedule". By 8 am, when I arrive at the office, I should have at least 1500 steps completed. By 9 am, that total needs to be 2000. By the end of lunch, it has to be at 4000. By the time I leave for the day, it has to be at 6000. Then by bed, I can reach the 8000 step goal. I meet these goals by getting myself up throughout the day. If my phone rings, I pace while I'm talking. After each meal, I have obsessed myself with walking for at least 10 minutes. Even when I'm relaxing, if my step goal isn't met, I pace and drive my family nuts. Is this normal?
Anyone wanna walk? Anyone? Cinderella? 

Who's to judge normal? Can I judge my own normal? Can my family judge normal? Should I consult a doctor on it's normality? How about a therapist?

What I do know is that I have been much more active since January 12th, which was the day I set my goal at 8000 steps a day rather than the Fitbit suggested 10000 steps per day.

In 2013, according to Fitbit.com, I averaged 6173 steps per day. In my new hyper-focused state, since 1/12/2014, I've averaged 9099 steps per day. So, is it obsession? Yes, I believe it is...but is it a bad obsession? Who am I to judge?

Anyone have any input for me? I would love your feedback!

Meal Plan - Week of 3/2/2014

Sunday: Salad/Sandwich night. We drove in from Raleigh today (where we had an AMAZING brunch), so we decided to go light. Salads and sandwich night! Chicken Salad, Egg Salad, and the like.

Monday: Steaks/Sweet Potatoes/Salad: I have meetings on Monday evening. Mark is grilling steaks that we didn't fix last week. We'll top it off with Sweet Potatoes and a salad.

Tuesday: Low Carb Beefed Up Meatloaf and Asparagus. Again, this is my favorite. I think I overdo it, but the family likes it, so here it is again!

Wednesday: NCSD Fundraiser @ Motown Deli in downtown Morganton. Mark will be there all evening folks. Go check it out and order some food so his poor Senior Class can have a great Senior Trip.

Thursday: Roasted Chicken Thighs and Brussel Sprouts: Mark will be making this because I have a cooking class. We found a delicious looking recipe in Cooking Light Magazine. He's going to give it a whirl.

Friday: TRX Class. Mark and I are going to try a workout called TRX at The Original Workout at 6pm. We are excited. Dinner will be something quick after we workout. Or, we might reward ourselves with a nice dinner afterwards. Depends on how sweaty we get!

Every year, for a while now, Mark and I have participated in Big Brothers Big Sisters annual fundraiser dubbed Bowling for Kid's Sake. Thankfully, for me, we've gotten into the habit of taking a photo each year and it just so happens, that in February 2012, I was at my heaviest weight ever. Even though I am not proud of the weight that I reached, I am very happy that I had this picture taken. It serves as a constant reminder of where I was and where I could still be without having made significant life changes. I've shared this picture before, but I think it deserves a repeat.

While 175 is 5 pounds over my goal weight, I'm super pleased with the progress I've made. But I can guarantee that EVERY single year, I'll be repeating this photograph and next year, I will be at my goal. Then every year after that, I will continue the journey because when I made that lifestyle change on July 8th, 2012, I knew that the journey ahead was going to be hard and that it WAS going to be forever. 

And, every step of the way, I've kept reminding myself to refocusonlife even if just for a second each day.

Meal Plan - Week of 2/23/2014

Sunday: Pork Stuffed w/ Apples & Cranberries, Brussels Sprouts & Strawberry Napoleon (Pictured)

Monday: It's Pizza night. $6 at Papa John's. I'll be tied up in the evening, so Mark is handling dinner and the girl has requested pizza. I'll pickup a salad somewhere.

Tuesday: Whole Wheat Spaghetti and Salads

Wednesday: Chicken Pot Pie (the crust will be made of whole wheat flour). I'm using a recipe from Bobby Deen's Cookbook. We'll see how it turns out! I made it once before and made some notes about changes that I needed to make. Can't wait to try it again.

Thursday: Steaks. When the snow came, Food Lion was closing early one day and had a ton of fresh meat they wanted to get rid of cheap. We are lucky enough to have steaks from that day! Can't wait to cook them up. We'll pair it with some Green Beans.

Friday: Out to Dinner. We are going to see a concert at LRU...the Navy Band. Can't wait. The 4 of us will grab something quick.

Saturday: Who knows? We're going to LegoFest today. I know we'll be going to the Pit with Maggie, John, and their children. I'm sure I'll overeat!

a moment to refocusonlife ~ small changes

A little over a year ago I wrote the first inspirational "moment to refocusonlife" at the request of Donna Rauschenberg. That first entry was about small things making big impacts. I stand by that. Small things can bring about HUGE changes.

Let's review...
Over the past year, have you made any small changes? I have. I continue to use the mantra "just for today". For instance, "just for today, I'll make sure I walk at lunch."

But, I know that even those small changes can feel insurmountable. One thing I want to do, as I've noted before, is work on my abs. I had Chris Powell to respond to a post on Facebook where I asked him what I could do about my abs. He (or most likely one of his staff) sent me a link to a 5 minute ab workout. 5 minutes! I was gung ho! Of course I could work 5 minutes into my day.

That was a week ago and I have yet to implement that program. In the course of that week, I've been too lazy to even consider doing 5 more minutes of exercise.

One thing I did change was that I was eating a bowl of ice cream every single evening. I've noted that before as well. It was Edy's no-sugar-added fudge tracks ice cream, but it was having a huge impact on my blood sugar numbers...I think mostly because of the time of day I chose to eat my ice cream (late in the evenings). I decided one evening, just for this evening, I will eat a small bowl of sugar free Jello instead. Then the next day, I did the same. And the next...
Now, I've replaced my Ice Cream habit with a much lower calorie Jello habit. My blood sugar numbers have corrected themselves. The Jello has a much lower impact on my blood sugar.

My point here is...it works. If you can repeat the mantra, "just for today........." followed by whatever it is that you want to do, you can create change in your life. Our mind is a powerful weapon in our arsenal of change.

Meal Plan - Week of 2/16/2014

Here's this week's plan! As always, let me know if you would like to have any recipes or if you'd like to offer us some suggestions! I ALWAYS love fresh ideas for food!

Sunday: My sweet Momma cooked us a fantastic dinner. It consisted of London Broil, Broccoli Casserole, Deviled Eggs, Asparagus, and a wonderful low-carb strawberry/cream cheese dessert. Suffice to say, I always eat too much when I'm at Mom's! But, it was delicious!

Monday: I have meetings all evening. Mark is cooking BBQ Pork Chops using bottled Paula Deen Sugar-Free BBQ Sauce. He'll most likely pair it with a salad for the two of us.

Tuesday: Chicken Parmesan with homemade tomato sauce. Sautéed green beans. Roasted Parmesan Asparagus.

Wednesday: Turkey Piccata. This is a new favorite of mine! Very low calorie, very low fat, and amazingly tasty. It's hard to find "turkey cutlets", so I buy a turkey breast tenderloin, cut it and pound it into cutlets myself. We'll add baked sweet potatoes and brussels sprouts.

Thursday: I have a cooking class this evening. I'm SO excited! Can't wait for 6pm, but have to squeeze in dinner for the family first, so we are having hamburgers because everyone loves them and they are quick. I will eat mine sans bun with some gourmet cheese and probably some sautéed mushrooms. We'll add sautéed or roasted veggies as well. Perhaps some sweet potato fries.

Friday: We take the kids to their Mom's house most Friday evenings. This will be a dinner out most likely.

Saturday: Roast Pork Loin with Apples & Cranberries. I'm excited to try this new recipe! I expect it to take a little time, so I decided to try it out on a Saturday. We also have our "Bowl for Kids' Sake" fundraiser today. Hopefully, I'll get a couple strikes. I'd also like to hit the greenway for some exercise.

Also, during the week, I've decided to try to make a cauliflower soup as an appetizer one evening. It's a new recipe as well. Hopefully, it'll be great!

You all ready for #snowpocalypse 2014? Believe it or not, I actually am. No, I don't rush to the store to buy bread and milk...but I did do my normal shopping this past weekend.

During my shopping trip at Ingles, I encountered yet another teenage-ish employee. Remember the other one I mentioned before? This one wasn't quite as cute as the one before, or maybe that's just my opinion of him after he said what he said...

The ringtone on my phone for Mark is always a song with woman, girl, or something relating to women in the title. For instance, it's been Dancing Queen, Redneck Woman, Girl on Fire, and the list goes on and on and on...much to Mark's chagrin. Right now, the ringtone happens to be Only Girl (In The World). Over the weekend, when I got to the checkout line at Ingles, my phone started ringing...it was Mark. Because I think it's insanely rude to talk on the phone while in front of the cashier, I told Mark that I would give him a call back when I was done.

Dudely that was bagging my groceries looked at me and said, "Nice ringtone man. I like that. I wouldn't have imagined you would have that as a ringtone on your phone."
I said, "Yeah, thanks, I think. Wait, why wouldn't you think I would have that ringtone?"
Silence.
Me: "Oh...because I'm OLD, right?"
Silence.
Me: "Funny story about the ringtone man...I'm actually married to a man and his ringtone on my phone ALWAYS has to be a song with girl, woman, etc in the title or lyrics."
Extended silence.
Cashier: "I have a friend that likes guys."
Me/Internal Monologue: "Oh dear god. I have to get away from the 12 year olds."

Well, that's enough of that. Point of the story here is that I think I do look old. In fact, in a Facebook "discussion" with a stranger on a completely unrelated post, I was actually told that I had "male-pattern baldness and a failed attempt at a beard." Ok. I can hang. I am getting older...but I'm only 39! I still have another year before my life is completely over.

But, I digress, and I will live, however; yesterday I was looking at a news story about The Biggest Loser. I flipped thru before and after photographs of all the winners of all the seasons past. Without fail, I noticed that EVERY single man that had won the show looked many years older at the end of the show than he did when he started. The women did not seem to have the same issue.

What is that? What's that about? Did I age myself with weight loss? Well, what I gained in wrinkles, I won in health benefits, so I guess bring it on!

And, speaking of bringing it on...BRING ON THE SNOW.

Monday 2/10/2014: Pizza/Salad: We'll buy pizza at Papa John's because everyone in my house loves it and it's just $6 on Monday evenings. I'll eat the toppings off of 2 slices and pair that with a huge salad.

Tuesday 2/11/2014: Tacos/Enchiladas/Salads: I make my own taco seasoning. None of that mystery powder for us! And, everyone loves it! I'm making White Chicken Enchiladas for myself (no one else in my house will eat them) while they all have beef tacos. Leftover enchiladas are one of my favorites! I'll use the Whole Wheat Carb Smart Tortillas. I cooked the chicken today (Sunday) in preparation for this while I had extra time).

Wednesday 2/12/2014: Meatloaf/Green Beans. One of my favorites. YUMMMMMM! I'm also going to take a stab at making some baked, breaded okra (using whole wheat flour).

Thursday 2/13/2014: Peach Pork Tenderloin/Brussels Sprouts/Sugar Snap Peas

Friday: Some quick and easy for Mark and I as the kids will go to their Mom's house.

Saturday: Dinner Out

a moment to refocusonlife ~ confessions of a foodie

This past weekend was my birthday. I know, happy birthday to me! Trust me, it was a full weekend celebration. I have the best children, husband, family, and friends a young whipper-snapper could ask for! A big shout out to all of those that helped make my birthday special.

But, I digress. It was my birthday weekend. I celebrated. With food. Ugh. On Friday night, we ate at Louisiana Purchase in Banner Elk. Wow. Probably one of the top 10 meals I've had in my life. I cannot say enough good things about the food, but the after dinner bitterness came in the form of a check that knocked my socks off.

I believe I've made this confession before on this blog, but it warrants repeating, I'm a hopeless foodie. Last week, I read an article in Prevention Magazine. Prevention is a fabulous little source of information and inspiration. There was an article by Dr. Pam Peeke, a healthy living coach, in the "Answers" section of the magazine. The question at hand was, "My friends socialize over trendy but fattening meals. How can I stay slim?" It's a great article in the December 2013 issue of the magazine. I wanted to offer my two cents on staying slim in light of socializing over food because it is a fact of life. People want to gather over food and/or drinks. To me, there's nothing better than gathering with friends and family over a nice meal. The fact that I'm a foodie heightens the experience for me. But, I'm here to tell you, even the most trendy, stylish, and snotty restaurants want to make their diners happy. They are, after all, in the service business. Trust me, from a guy with an MBA with a marketing emphasis, negative word of mouth advertising can destroy even the best of businesses. Restaurants face a tough marketplace climate in light of sites like Yelp, Tripadvisor, Urbanspoon, and others.

Asking a restaurant to modify a dish is no longer a question of "if" for me, but a question of "how". They will modify the dishes on the menu. In fact, I find that the nicer the restaurants, the more focused on fresher, healthier ingredients they have become. It's more difficult for me to have a chain establishment to modify a dish to include more veggies and less starch than it is for a restaurant like Root & Vine in Morganton. I always modify my dishes. You should too! Ask for fewer french fries and potatoes and more fresh veggies and fruit! It'll make a world of difference in your overall health.

If you had told me 4 years ago that I would choose Salmon in a beurre blanc sauce with zucchini and white asparagus over a New York strip with roasted garlic mashed potatoes, I would have called you crazy. What's even more impressive is that I would gladly choose the Salmon with veggies over deep-fried chicken strips and fries from Zaxby's (<--My Favorite pre-weightloss meal.)

My point here is this--just because your friends socialize over food doesn't mean that you have to indulge. Make smart choices at dinner, stay away from the buffet and the alcohol, and focus on the socialization more and the food less.

Happy Snowmp Day! (That's Snowy/Hump for those that don't speak doofus.)

Anyway, here's another one for you: FRAbs
Could you guess what that means? Probably not. But, I'm about to tell you.

Don't laugh! I'm putting it all on the line! 
One night this past weekend, I was in the bathroom getting ready to go to dinner. I had just taken my shower and was blow drying what little bit of hair I have left when Mark walked in. He said, "dang, look at those ab's!"

Huh? Excuse me? Did you say "Ab's"? Like, as in abdominal muscles? Really? Son, do you need your glasses checked? I said, "honey, those aren't ab's, those be FRAbs!"

What's a FRAb you say? Well, easy, it's Fat Roll Ab!

I truly do not know what Mark thought he saw, but even after losing a significant amount of weight, my ab's are still firmly (or squishily) planted below a layer of other "stuff". You know the saying, "I have washboard abs, they are just busy doing a load of towels right now", right? You've heard that one, right? No, don't worry, I'm not going to give up my day job to become a comedian...yet...

Anyway, thought I'd put this out there. Yes, I've made huge, sweeping changes in my dietary life, but I'm still NOT a fan of exercise. I'm not sure I'll ever have visible abs, but I sure would like to consider it a goal. So, I'll add that to my list of goals. Remember, goals have to be SMART. So, is that a SMART goal? Nope. But it is a dream...and without dreams, what good are our goals?

I'm looking forward to a wonderful 2014 filled with many surprises. Maybe one of those surprises will be the emergence of my abs as I rescue them from the FR's. Speaking of...I'm ready for spring because I'm certainly FRRRRRozennnn right about now.

Meal Plan - Week of 1/26/2014

Meal Plan - Week of 1/26/2014

Here's this week's plan, let me know if you have any questions:

Sunday: I have to go to Wilson this evening for work. Mark and I are skipping lunch and grabbing an early dinner. Not sure where, but I'm hankering for some grilled seafood, so most likely Red Lobster (we have gift cards).

Monday: Spinach Lasagna. We all love this. This week, I'm going to use a mixture of veal, beef, and pork as the meat. I do have half with Ricotta and Mozzarella and then I do half with no ricotta because Mark hates it. We always throw in a few layers of spinach. Yum! We'll have salads and a  vegtable as sides.

Tuesday: I have evening meetings and will not be home. Mark is going to make the dinner of Kielbasa's and Macaroni and Cheese. I let them slide a bit when I'm not here because they all miss the things like "real" macaroni and cheese. I don't understand why they don't just use the whole wheat pasta, but I give them an inch every now and then.

Wednesday: Fajitas. Yum. Christian actually requested this. We'll use boneless, skinless chicken and marinate it overnight. It's always VERY good. I'll add lettuce, salsa, tomatoes to round out the meal.

Thursday: Cubed Steak/Deviled Eggs/Brussel Sprouts. I hate cubed steak, but I'm hoping for a renewal of flavor. I hated pork chops too, but recently started eating them when I found a delicious new recipe. We have to be willing to try new things, right? I'm still searching for just the right recipe.

Friday: Ski weekend, so who knows?

a moment to refocusonlife ~ oh food, where art thou?

Happy HUMP day everyone! I hope this week is treating each one of you the best it possibly can! I'm having a great week...but I'm hungry. Ever feel like you just cannot get enough to eat? Well, that's me this week. For a foodie to be hungry is a problem!

But, I keep thinking about things I've heard and things I've read. The more I read about other people's journeys and the more healthy living information I read, the more I know I'm on the right path.

I recall hearing a podcast by Jillian Michaels a few months ago where she had a conversation with a lady that had lost some weight. This lady was frustrated because she had gained back a significant amount of the weight she had lost. Jillian started questioning and found out that the lady had been on a "low carb diet". After she reached her goal, she began eating food as she had before. She was done. She reached her goal and expected to stay at goal even though she was no longer eating low-carb.

I remember specifically, this lady told Jillian it wasn't fair that people all around her could "eat bacon cheeseburgers and french fries and not gain weight". Jillian asked her how she knew that people were eating bacon cheeseburgers and not gaining weight. The response was that she saw people eating in restaurants, at events, and all around her. Jillian told her that was not a good comparison. How did this lady know that the person eating the bacon cheeseburger hadn't just finished a 6 hour workout at the gym? How did she know that this person wasn't eating their one cheat meal of the week or month? How could she possibly know what was happening in that person's life?

Last night, I was reading Men's Health Magazine (an EXCELLENT resource), and saw an article about Quinn Hatfield. He explained that he had a "cheat window" where, "I don't hold back. Pizza, cookies, ice cream--and lots and lots of it. It's important to remember how good it feels to just eat." If I saw Quinn eating this one cheat meal, which is possible because he is a North Carolina native, would I know that he is a Michelin-starred Chef from Los Angeles? More importantly, would I know that he is a member of the USA Cycling Team and trains his ass off most days of the week? Probably not. I would just be jealous that he is eating his weight in greasy food and delicious desserts and he has a ROCKIN' body. Yep, I would be jealous.

At that point, I try to remember, I did this to myself. My habits for the first 35 years of my life pushed me into early diabetes. My lifestyle is a work in progress. Lately, I've been eating a bowl of Edy's No Sugar Added Fudge Tracks ice cream nightly. It kind of grew over the weeks. It went from a half of a cup a night to a full cup a night with sugar free caramel sauce and sugar free cool whip. Fun times, right? Then I noticed a sneaky trend...every morning, my blood sugar levels were between 120 and 130. An alarming trend when my blood sugar had been running less than 100. So, even though I crave the ice cream (that's what sweets do to a diabetic), I have been actively avoiding the nightly treat this week. Guess what? My blood sugars have corrected themselves. With that in mind, I know what I have to do, but dang it, I'm hungry and I want my ice cream like Quinn Hatfield!

For today, though, I am one hour at a time. For a foodie (read food addict) like me, that's what I have to do. Moment by every refocused moment.

Meal Plan - Week of 1/19/2014

Here's this week's plan! Let me know if you want any recipes or anything!

Sunday: Cabbage Casserole: This one was left over from last week--I didn't make it. This turned out to be like a low-carb lasagne using cabbage instead of pasta. It was very tasty. Next time I will leave out the brown rice from the receipe.

Monday: Low Carb Beefed-Up Meatloaf: Probably my #1 favorite recipe ever. Delicious! We'll add some browned butter brussels sprouts and a salad.

Tuesday: Chicken Marsala: This is a new one for me. I found a good recipe in Cooking Light Magazine. We'll skip any pasta and have a salad and probably some stir-fried Sugar Snap Peas.

Wednesday: Leftovers: Almost nightly I have too much food. So, on Wednesday, we'll take some of things I've frozen and it'll be diner's choice from the items we have. We'll add some roasted asparagus.

Thursday: Chicken Enchilada's: This is a new one as well. I have some low-carb tortilla's I want to use. So, we are going to use chicken that we have cooked and frozen to shredded and make some delicious Enchilada's. I found a recipe for homemade sauce. I'm pretty excited about this one! We'll top it off with a Mexican Salad of sorts.

Friday: Lauren's Choice: She's been telling me to take her somewhere nice for dinner. This is her night! Choose wisely my child.

Saturday: Leftover Ham: Again, the freezer is overstocked. We're cleaning house! We'll top it with whatever veggies we have left from the week. Lunch will probably be egg salad or just salads.

a moment to refocusonlife ~ negative nancy

First off, have you ever looked at Urban Dictionary? If not, I highly recommend you take a minute just to look at the definition of "Negative Nancy" on Urban Dictionary. The example listed in definition #1 is a MUST READ, but only if you do not get offended easily.

Well, we've made it to Thursday. That's something, right? It's been a tough day for me. I'm feeling very negative right now. Let me explain. You all know that I HAVE Type II Diabetes, right? No matter if I am completely cured, devoid of medications to treat, and am wholly maintaining my chronic disease thru diet and exercise, or what, I am still officially diagnosed with having diabetes. I always will be.

I feel like I'm trotting down a trail trying to make sense of this all, but stay with me for a minute...
As a responsible adult, I feel that it's important for me to have life insurance for my kid's sake. Truly, if something were to happen to me, I would just want them to have some protection. So, approximately, 10 years ago, I decided to take out a 10 Year Term Life Policy.

If any of you are aware of how term life insurance policies work, at the end of the term, your options are somewhat limited. You can convert that policy to a whole life policy, but you have to go thru the underwriting policy again and the rate is adjusted in a VERY steep incline. You can also renew the term life insurance policy, again adjusting the rate upward for the new term, whatever that may be. And, lastly, you can let the insurance policy just go away no harm/no foul.

Why did I choose 10 years? I was young and dumb, I guess. I should have covered my children until a minimum of 25 or so. I should have chosen 20 years instead of 10. Hindsight is 20/20. I didn't want my rates to be adjusted to far upward, so I started looking at alternatives and found that State Employees' Credit Union offered term life policies at very reasonable rates. Basically, I'm being a Negative Nancy today because recently, I went to SECU to apply for their policy. I was immediately denied because I was truthful about my Diabetes diagnosis. Basically, the underwriters do not care if I have "cured" myself or not. They look at facts. Fact is, I have the diagnoses. Fact is, I took insulin  and oral medications in my past. They don't care that I no longer take those medications.

I call party foul, but probably as a general rule, people that lose weight, keep it off, and maintain their diabetes without medication is probably an EXTREMELY low number of people. I get that. I understand that. After all, insurance is a game of odds, right? They are trying to increase their odds of NOT having to pay out a term life policy. So, why would they take an old, worn out, diabetic-ridden, turkey neck of a man to insure? Yep, I'm being a Negative Nancy.

Ok, enough of that. You know what? I don't care what they say! I don't care what they think! I'm not going to let this affect me a second longer! It IS a new day. We all make choices. Right now, I'm not going to be a Negative Nancy! I choose to be positive. I choose to embrace the good things in life. I acknowledge the negatives, I may even try to correct those negatives, but I will NOT allow those negatives to control me or allow me to change my name to Nancy!
